Walnut Lemon Orange Peel Cake

This is a Walnut Lemon orange peel cake. This recipe is very easy to make and does not contain a lot of work.  If you or any relatives and kids that have allergies to nuts, do not put any on the top for decoration. You can substitute for other kind of topping of your desire. This cake are very good to have for snack wile your in work or school. Once you try these making this walnut lemon orange peel cake, you would love them a lot. It is very delicious and yummy cake.  Try the recipe and enjoy!!!

Ingredients:
4 eggs (room temperature)
1-1/8 cups of 2% milk  (room temperature)
2 cups of vegetable oil
2 cups of all purpose flour
1 cup of sugar
1 tsp Baking Soda
2 tsps Baking Powder
1/2 tsp salt
1-3 tsps of Lemon juice from bottle. If use from a whole lemon
(save remaing of the juice)
1 whole Lemon peels  or orange peel (your optional choice)
10 pieces of walnuts for decoration (note: if you are allergy to nut, you can
substitute with apple or orange pieces for the top decoration)

Directions:

Preparation:
1. take 4 eggs out of the fridge. Use a medium side round container and put some hot water and soak the eggs in it, until it is room temperature.
2. pour the water out in the sink and set it aside/
3. Use a measuring cup and pour 1-1/8 cups of 2% milk and microwave for 45 seconds.
Take it out and let it cool until it is room temperature. (note: by using your finger and dip in the cup of milk, you will feel if it is warm, that mean it is room temperature)
4. Prepare all the ingredients and set it all on medium size tray.
5. First, peel the 1 whole lemon for use later (note: if you do not have a lemon, you
can use a orange for the peels)
5. Use 1-3 tsps of  lemon or from a bottle of lemon juice.
6. ( if you already prepare the lemon juice and peels, you can eliminate this step)
7. preheat the oven at 350F continually until you are ready to bake.

Cake Mix:
1. Whip the eggs with an electric mixer and mix until you see a foam form.
2. Add in milk, oil sugar, baking soda, baking powder and salt. mix well (do not mix well
too long)
3. Sift in the flour slowly and mix until smooth.
4. Add 2-3 tsps lemon juice and lemon peel or orange peel. Mix well in the cake mixture with a spatula

Packing:
1. Prepare 2 aluminum rectangle aluminum foil cake pan (7-15/16″ x 4″) (small) or 1 piece (9 1/4″ x 5 1/4″ x 2 1/2 “) (Large) aluminum foil cake pan
2. Take a wax paper or parchment paper and cut a line on both end of the wax paper or parchment paper. Place it in the aluminum foil cake pans and fold it in and make sure it sticks in place.
3.  Top sprinkle with walnuts (if you have allergy to nuts you can eleminate this step)
4. You can also sprinkle some cut up small pieces of apples or oranges of your desire choice.

Baking:
1. Make sure the oven is preheated at 350F.
2. Bake for 40-50 minutes (for 2 small pans) For a large one bake for 50-60 min.
3. Check if it’s ready, Using a toothpick by inserting into the Walnut lemon orange peel cake. when it comes out clean, it is ready. If it does not come out clean then it means it need to be bake a little bit longer.
6. Release from oven and let it cool down for 5-10 minute before eating

Banana Bread Walnut cake & Banana bread cake

I like eating banana bread cake, so I decided to make a third one and share it on my blog. This is a Banana Bread Cake recipe, very easy to make and not to hard. I had a different way of making the Banana Bread Cake the third time. One is with walnut and the other one regular Banana Cake. If it is your third time making this, it will be made in a perfect and tasty banana bread cake.  Kids and Adults would love this banana cake very much. Try the recipe and enjoy!!

Ingredient:
3 ripe medium banana mashed
3/4 cup of sugar
2 eggs (make sure egg is at room temperature)
4 tablespoon of  butter or vegetable oil
1 teaspoon baking soda
1 teaspoon baking powder
Quarter teaspoon of salt
2 cups flour
3-4 tablespoon Milk (optional if the mix is too thick at the end)
( Make sure milk is at room temperature)
Add any kind of nuts on the top (Optional)

Direction:
1. preheat oven to 350F (180 degrees) Grease top of pan. If you are using a rectangular alumni with a wax paper, then you don’t need to grease.
2. In a Large bowl sift 2 cups of flour , 1 teaspoon baking soda, 1 teaspoon baking powder and Quarter teaspoon of salt and mix together using a spatula.
3. Take 3 medium ripe bananas and  peel the skin. Place it in a blender and blend it well. (make sure there are no big pieces leftover) then set it aside.
4. In a separate bowl put 4 tablespoon of butter and 3/4 cup of sugar.
5. Use an electric mixer and mix until combine. (make sure to scrap off the sugar on the side of the bowl, using a spatula.)
6. Take 2 eggs and crack it in a small bowl and beat it well. Then pour in the sugar and butter mixer.
7. Use an electric mixer and mix well until you do not hear any sugar at the bottom of the bowl.
8. Pour the ripe blend banana in the sugar, eggs and butter mixer and mix it all well combine with a spatula. Important not to over mix the batter.
9. While mixing and you find it is too thick, you can put some milk in it, (optional)
10. If you use milk  in the batter, make sure it is well mix with a spatula (note if you do not use milk then you can skip this step)
11. Now use 2 rectangular alumni or a large pan and grease it. Pour it in the pan. Then hit it on the table to remove any air bubbles.
12. you can add any kind of nuts of your desire on the top of the batter by spreading all around. (skip this step if you do not want to put nuts)
12. Bake for 40 min. Check if it’s ready, Using a toothpick  by inserting into the banana bread when comes out clean, it is ready.  If it does not come out clean then it means it need to be bake a little bit longer.
13. when it is ready. Cool in pan for 10 min. Then transfer to a wire rack.
14. Enjoy!!!!!

Swiss Roll Sponge Cake

Ingredients:

4 Egg yolks
20g Sugar
30mL Vegetable oil
40mL Milk
60g Cake flour

Meringue Ingredients: (for the egg white step)
4 Egg whites
1 tsp Lemon juice
50g Sugar

Direction:

1. Preheat the oven to 170ºC continually until you are ready to bake.

2.  Separate the egg white and egg yolk. Add the sugar 4 times in the egg white and whisk with a electric mixer until soft peak.

3.  Whisk using a spatula  together the egg yolk, vegetable oil and milk. Sieve the cake flour and add the sugar and whisk together, until the you do not see any flour and hear
any sugar in the bottom.

4.  Whisk using a spatula in 1/4 of the meringue into the egg yolk mixture. Add the egg yolk mixture back to the remaining meringue and slightly fold until combine.

5. Place the parchment paper on the baking tray. Pour the mixture in the baking tray, slightly pound the tray on the 4 sides to  let the air bubble release.

6. Place in the oven and bake it for 10-15 minutes. Then use a toothpick and stick it inside and take it out to see if the toothpick is dry. If it is still not ready bake for another 10-12 min. When you smell the cake and see golden brown it is a bit bigger it is ready. use a baking rack and  Lay a parchment paper on it, flip it over and remove parchment paper. place on the cooling rack to let cool for a bit.

7. Cut the first hard line piece and roll it to form a Swiss roll. You need to roll it slowly and pull the parchment paper a bit each time, until you get to the end. Let it sit and cool
for 10 min.

8. When 10 min is cool down. Slowly take the parchment paper off the swiss roll.

9. Take a cutting board and knife. Cut each pieces in a roll and place it on a plate

Lime Sponge Cake

A simple sponge cake to make. It does not contain a lot of work, but when it
comes out of the oven, it will smell so good and tasty.  Everyone will love this
cake. You can eat the cake without decorating, It is your desire. Please try the
try the recipe and enjoy.

Ingredient:
1 cup all Purpose flour           5 egg Yolks                                        5 egg whites
1tsp Baking powder                1/2 cup of sugar                               1/2 Cream of tartar
1/4 tsp Baking soda                 1 tsp Vanilla Extract                        1/4 cup sugar                 1/8 Salt                                       2 tbsp lemon juice
1 lime peel
1/4 cup vegetable oil
1/3 cup water

Direction:
1. Preheat oven for 350F (180c) for the longest until you are ready
to put in oven.
2. Sieve together flour, baking powder. baking soda and salt in a bowl.
3. In a big bowl separate the egg yolks and egg whites,
4. In the big bowl, beat egg yolks and sugar until light. Add in vanilla, lemon
juice, lime peel, oil, and water with electric or food processor.
5. In separate bowl, add the cream of tartar in egg whites and beat until foamy.
Then add 1/4 cup of sugar at a time. Beat until stiff glossy peaks (when you turn
the bowl over the cream will not move and it stands alone.)
6. Sift the flour in the egg yolks mixture, and mix  thoroughly. Add in 1/3 egg white
with a rubber spatula to the mix and gently fold. Add the remaining egg white and
gently fold until it is mix together goodly.
7. Take a 9 inch spring foam. Use some parchment paper and cut the shape of the
spring foam around covering it.
8. Pour the mixture into 9 inch spring form and pad the spring foam on the table a bit
to make it even.
9. Put it in the oven and bake for 35-40 minute. make sure the preheat oven is at 350F (180c)
10. When it is ready put a toothpick in the sponge cake and if it comes out clean, it means it is ready.
11. Remove the cake from the oven and let it cool. Turn the pan upside down bottle until
completely cool.

                                                  Decoration Filling
1. Take 2-1 cup of whipping cream and pour it in a bowl.
2. Use a electric beat and beat until it is stiff glossy peaks  (when you turn
the bowl over the cream will not move and it stands alone.)
3. When it is ready. Make sure the cake is all cool down.
4. Spread the whipping cream all around the cake and make sure there are
not spots missing.
5. Cut up what ever fruits you like and put it on the cake and place
it the way you desire. If you like you can put the same way that is in the picture.

Banana Bread Cake

I like eating banana bread cake, so I decided to make a second one and share it on my blog. This is a Banana Bread Cake recipe, very easy to make and not to hard. I had a different way of making the Banana Bread Cake the second time. If it is your second
time making this, it will be make a perfect and tasty banana bread cake.

Ingredient
5 ripe medium banana mashed (if it is large use 3)

1 1/2 teaspoon baking soda (if you think it is too much you can put less baking soda 1/2 teaspoon)

5. Put all the wet ingredients in the flour mixer and  Mix it using a spatula and it is very important not to over mix the batter.
6. While mixing and you find it is too thick, you can put some milk in it, (optional)
6. Now use 2 rectangular alumni or a large pan and grease it. Pour it in the pan. Then hit it on the table to remove any air bubbles. Bake for 50 min for large 1 hour. Check if it’s ready, Using a toothpick by inserting into the banana bread when comes out clean. That is when it is ready. Cool in pan for 10 min. Then transfer to a wire rack.

Jelly Cheese cake (No Baking)

IMG_20181130_224144I made another cake, which is the jelly cheese cake. It is a little bit sweet because of the condense milk. It’s an easy cake to make. Just put in the fridge. Does not contain any baking. Some people might like it and other might not. Try out the recipe and see if
you like it. Enjoy!!!!

Ingredient:
4-5 different flavour of jell-o your desire
100g melted butter
20 pieces Marie or plain biscuits will do
2 packs or 500 gram cream cheese (make sure it is at room temperature)
1 can 395 condense milk
1/4 cup boiling water
3 tsp of unflavoured gelatin

Direction:
1. use 4-5 different Jell-o as your desire and
follow the instruction on the box. Put it in
the fridge for 2-3 hours.
2. Brake the digestive biscuits into pieces like flour texture.
3. Take the 100 gram of butter and put it in a bowl. Put it in the
microwave for 30-50 seconds. Make sure it is all melted
4. Put it aside to let it cool.
5. Pour the melted butter into the digestive biscuits and mix it well,
until it is hard and it can stick together
6. Pour the digestive biscuit in a spring from pan and press it firmly
until it is hard and make sure  the sides are perfectly press.
7. Take the Jell-o out of the fridge and cut it into cube pieces.
8. Put all the Jell-O pieces in a bowl and set it aside.
9. Filling cheese cake, we will need 1/4 cup of boiling water,
3 tsp of gelatin, 2 cream cheese and condense milk.
10. boil the hot water and pour 1 cup of water in a cup.
put 3 tsp of gelatin in it and mix it together until deslove.
11. Put it aside to cool.
12. Take a mixing bowl and put the two pack of  cream cheese in
the mixing bowl. (make sure the cream cheese is at room temperature
before using the cream cheese} It will be easy to mix to avoid lumps.
13. Using the electric mixer and start beating the cream cheese for 2-3 minutes
Scrape down the sides of the cream cheese.
14. Continue beating for a 2-3 minutes, Then add the condense milk and mix until
it is smooth and free of lumps. (make sure to scrape off the side of the bowl if needed)
15. Now rehear the gelatin in the microwave for 7-10 second only. Take it out and make
sure before you put the gelatin in the mix, it is not hot and a little warm.
16. when the gelatin is warm, pour it in the mixer fast and mix it with an electric
mixer until it is combine mix well.
17. Add half of the jell-o in the mixer and gently fold it a couple of times. Then add the rest of the jell-o in the mixer and fold it gently a couple of times again. make sure it is well mix.
18. Take the digestive biscuit out of the fridge and pour the mixer in the pan and separate it evenly.
19. Take the extra jelly and use it for decoration on the top the way of your desire
20. Put it in the fridge for 4 hours or overnight.
21. Take the cake out of the spring pan by using a hot towel.
22. Enjoy!!!

No baking Tiramisu Cake

An easy simple cake to make, but it desire a lot of work. Once you get the hand of it,
you will find it easy to make. Very tasty cake, with a little bit of alcohol in it. Tiramisu
is a great cake to go with coffee or tea. Very fun cake to make. I enjoyed it and so will you. Give it a try and enjoy.

Ingredients:
3 Eggs yolks
1/2 cup of Suger
400g Mascaropne Cheese
1 tsp Vanilla extract
400g whipping cream (use the low fat Nurtruit)
4 tbsp Black Coffee
1 1/2 cup of water
3 tbsp Amaretto
3 tbsp Baileys
40 pieces of lady finger
2 tbsp Cocoa Powder

Direction:
1. Put Black Coffee in a container and pour hot water. Then put over cold water
to cool it down.
2. Crack the 3 eggs and separate it. Only use the 3 egg yolks. Put it in a mixing bowl
and put on top of a double boiler, mix together with the sugar and vanilla. Make
sure it is standing over the simmering water. Continue to whip for one minutes,
until the egg yolks are creamy, Now you can remove it from the heat and let it cool.
3. Now whip the cream until it stands, but do not over whip ( note: when you turn it
upside down the cream does not fall or move)
4. Next, spoon the mascaropne cheese and into the egg yolks mixture and mix evenly
blended.
5. Take 1/3 whip cream into the cheese mixture and mix well. Then pour the cheese mixture back into the rest of the whipping cream and mix well.
6. Starting by combining the coffee: Put in the amaretto and bailey in the coffee and mix
well. Now dip the entire body of the lady finger into the mix on one side and other side fast. then place the fingers in the base of a glass pan or a cake pan. Then spoon over
with the cream mixture. Dust with a little cocoa powder. repeat the same step again. Dip the entire body of the lady finger into the mix on one side and other side fast. Then spoon over with the cream mixture. Dust with a little cocoa powder. Finally when you get to the top just a layer of cream.
7. Place the Tiramisu in the fridge for a few hours or over night. Before serving dust a little coca powder.
8. decorate anything of your desire.

Tofu Mousse Cake

A very tasty Green Tea Mousse Cake, that you can make for people who does not eat cheese. This cake is just put in the fridge. Does not contain any baking. Try out the recipe and enjoy.

ingredients (6″ inch)

Cake Crust:
1 1/2 Digestive Biscuits
1/4 Melted unsalted butter

Direction:
1. Prepare a 6 inch round cake mold. Take a parchment paper and use the bottom
round mold to make an out line and cut it around. put a plastic wrap on the  bottom of the round and then snap. Melt the butter in a microwave for 30-40 second. Sit it aside to let it cool. Mix the butter and crushed biscuits together well. Then using a hand and press
the biscuits and butter together if it can form together without coming lose
combine the ingredients press into the bottom of a 10 inch spring form pan
note (if using these ingredient can make 2 pan if you are using a 6 inch pan)
put it in the fridge after.

Ingredients:
230g Tofu
100ML Soya Bean Milk
120ML Whipping cream
40g icing sugar
2 Tbsp Gelatin Powder
3 Tbsp Water

Direction:
1. Sift the tofu and combine with the soya bean milk
2. place the whipping cream in a cold bowl and soft the icing sugar.
Whip the cream until it stand, when u turn over and it does not move.
like soft peaks
3. Fold in the mixture to the whipped cream in 3 additions.
4. Melt gelatin over hot water and add some tofu mixture to combine
Add the gelatin mixture to the main batter and right away whisking quickly
because gelatin will harden fast.
5. Pour the mousse into the biscuit mold and refrigerate for 2-3 hours
6. take it out and decorate the cake of your desire.

No baking Matcha Marble mousse cake

ingredients (6″ inch)

Cake Crust:
Digestive Biscuits 60g
Melted unsalted butter 25g

Fillings:
whipping cream low fat nutrial 250g
Granulated sugar 50g
Gelatine 12g + water 30g
Matcha powder 8g + hot water 40g
(optional) Matcha powder 1 tbsp + hot water 4 tbsp for decoration
(can put what ever your desire )

Instruction:
1. brake the digestive biscuits into pieces, like flour texture
2. melt the 25g butter in the  microwave. Let it cool. Then
pour the melted butter in the bowl with the digestive biscuit
and mix it until it is hard that it can stick together.
3. Use the cake pan and pour the digestive biscuits and press it
evenly. Make sure it is hard. Put it in the fridge for 20 min or over
night, depending on when you are doing the bottom cake.
4. Take a cup and put 8g of Matcha powder then pour hot water
40g and mix with a spoon
5. Take another cup pour in 12g of gelatine and warm water 30g
and mix until desolve.
6. Now use a mixing bowl pour in the 25g whipping cream and mix with
an electric mixer, until bubble. Then pour sugar a bit and mix well. Then pour
the rest of the sugar and mix until the whipping can stand (when you turn over
the whipping cream will not drop down on the mixing bowl)
7. Now pour in the 120g of milk. Then the Matcha powder mixture. and mix it
well with a spatula gently.
8. Now pour Gelatine and mix well and don’t wait because gelatine get’s hard fast.
9.  (Optional) Now put it aside and make the matcha 1tbsp + hot water 4tbsp and mix it.
10. Take the bottom cake digestivbe out of the fridge and pour the stuff inside the cake
pan. Make sure you use a spatula to spread it evenly.
11. (optional) put 5tbsp Matcha fillings on the cake  of your desire design.
12. fridge it for 4 hours or over night
13. Take it out of the fridge. Then take it out of the cake pan.
14. Now it is done. Enjoy!!

Ingredient
2-3 ripe large banana mashed
1/2 cup of sugar
1 slightly beaten egg (make sure egg is at room temperature)
5 tablespoon of melted butter or vegetable oil (note: butter would be better, but you can still use vegetable oil if you like)
1 1/2 teaspoon baking soda (if you think it is too much you can put less baking soda 1/2 teaspoon)1 teaspoon baking powder
1/2 teaspoon  salt

Direction

2. break the banana into pieces. Place it in a blender or a stand blender and mash the banana very well. Make sure there is no big or small pieces left over.
3. Mix the mashed banana, sugar and butter or vegetable oil together using a spatula
4. in a separate bowl sift the flour then put baking soda baking powder and salt and mix together using a spatula.
5.Put all the wet ingredients in the dry ingredients together. Mix it using a spatula and it is very important not to overmix the batter.
6. Now use 2 rectangular alumni or a large pan and put a wax paper. Pour it in the pan. Then hit it on the table to remove any air bubbles. Bake for 20 min. Check if it’s ready. If not then bake for another 10-12 min. Use a toothpick insert in the banana bread comes out clean. That is when it is ready. Cool in pan for 10 min. Then transfer to a wire rack.
