Soft Ginger Cookies (no molasses)

A simple cookie recipe, that everyone can make. It does not contain a lot of ingredients and you can make this in 30 min. It’s not a very hard cookie to chew. A very soft and healthy cookies. Does not take long to make. I did not put a lot of ginger powder inside because it will be very gingery. When you eat it you do not feel any ginger, but there are some ginger powder inside. It is like gingerbread. Without the molasses it ginger cookies. Kid will love it and you can make some for work, school and at home snack.

Ingredients:

2 1/4 cup of all purpose flour
3 teaspoon ground ginger
1 teaspoon baking soda
1 1/2 teaspoon ground cinnamon
1/2 teaspoon ground cloves (if no cloves can eliminate this)
1/4 teaspoon salt
3/4 cup butter, softened or oil
1 cup white sugar
1 egg
6 tablespoons brown sugar
Add some water if the dough is dry when mixing at the end.

Direction:

1. Prepare all the ingredients and set it aside.

2. Take 1 eggs out of the fridge. Use a medium side round container
and put some hot water and soak the eggs in it, until it is room temperature.
Then pour out the water from the container in the sink.

3. Preheat oven to 350 degrees until you are ready to bake.

4. Take a clean baking bowl. Sift flour, spices, baking soda, salt, and brown sugar in a baking bowl and Set aside.

5. Take another bowl and mix in together the butter or oil and white sugars, and beat in the egg.
6. Gradually stir in the flour mixture into the sugar mixture. Stir very well.7. If the batter is too dry then add some warm water in the dough mixer and mix well combine.

7. put a parchment paper on a baking pan

8. Gently us your hands and form 1 inch balls from the dough and roll them in sugar, if desired.
9. Place it on an ungrease cookie sheet.
10. Bake for 10-12 minutes or until golden. If it is not ready cook for a bit longer.12. When it is ready transfer it to a wire rack to cool off for 10 mintues.

Raisin Oatmeal Cookies

IMG_20200526_144828 A simple cookie recipe, that everyone can make. This is my third time making this recipe. It’s not a very hard cookie to chew. A very soft and healthy cookies. Does not take long to make. Kid will love it and you can make some for work, school and at home snack.

Ingredients dry:
1 cup of flour
1/2 cup of sugar
1 teaspoon baking powder
1 teaspoon of baking soda
1/2 teaspoon of cinnamon
1/2 teaspoon of salt
1 1/2 cup of oats
1/2 to 1 cup of dry raisins
1/4 cup nuts or whatever you desire (optional)

Ingredients liquid:
1/2 cup of vegetable oil
1 egg (room temperature)
1/4 cup of milk (room temperature)

Preparation:
1. Prepare all the ingredients on a tray.
2. Take 1 eggs out of the fridge. Use a medium side round container
and put some hot water and soak the eggs in it, until it is room temperature.
3. Put s 1/2 cup of raisins in a bowl and warm water and
heat it in a microwave foe 15 -20 seconds. Take it out and
drain all the water and set it aside until it is all cool down.
4. pour in 1/4 cup of milk in a  measuring cup and heat it
in a microwave for 30 seconds. Take it out and
set it aside until it is all cool down.

Direction:

1. Preheat the oven at 400 Fahrenheit for 10 minute and
continue preheating, until you are ready to bake.
2. Use a bowl and mix in all the dry ingredients, using a spatula.
3. Using a separate  bowl add in all the wet ingredients.
4. Incorporate all the liquid ingredients into the dry
ingredients together and mix well using a spatula.
13. When you mix the all together and you see it is very dry.
You can add a bit of oil and continue mixing. Still dry add some
warm water but not too much.  Mix the cookie batter until well
combine. When you see the cookie batter is moving itself a bit
That mean it is sticking together very well.
14. Take a cookie pan and place a wax paper. Use a spoon
and place the cookie pieces in a none grease pan.
15. Cook the cookies at 400 Fahrenheit for 10-12 minute.
16. Take the cookies out of the oven right away and place
it on a rack and wait for 10 minutes to cool off.
17. Enjoy!!!

Whipped Shortbread Cookies

It only takes 3 ingredients, to make such an easy recipe. Some people
might not think of how easy this recipe can be done. When it comes
out of the oven, you can smell the butter inside. It just makes you want
to eat it.  Some people think it’s to buttery and might not like it. If you never
try and make this recipe, you would never know weather you like it or not.
Give yourself a try and I know you will enjoy these cookies.

Serves 3 dozen small cookies

Ingredients
1 cup  softened butter
1 1/2 cups all-purpose flour
1/4 icing sugar
Walnut or any kind of nuts your desire

Instruction

1. Preheat oven to 350 degrees
2. Place softened butter in a bowl, mix it with an electric machine at a low speed for a minute.
3. Add flour 1/2 cup at a time. Mix after each addition until well incorporated.
4. Add the icing sugar and mix again for about 5 min.
5.  Use your hands and knead it into a dough.
6.  Chop the nuts into small pieces. put it in a plate.
7.  Take a dough of teaspoonful and roll it as a ball.
8. Make it flat, Use the ring finger and make a small hole in the middle.
9. put some walnut on top.
10. Put parchment paper in a baking tray.
11. Bake in oven for 11-12 minutes or until bottom are lightly brown.
12. Take it out of oven and set it in a place or a rack to cool it.

 

 

 

 

Peanut Butter Cookies

This is a very simple cookie recipe to make. If
you are allergies to peanut butter then this is not
the recipe for you. Please let me know what you think
of this recipe.

Ingredients
1 cup of peanut butter
1/2 of sugar
1 egg

Direction
1. Preheat oven at 350 Fahrenheit
2. mix all ingredients together until blended
3. Roll all 24 balls (1 inches) place 2 inches apart
on a baking sheets. Flatten each in criss-cross
pattern, with tines of fork.
4. Bake 15 min or until lightly browned
(do not overbake.) Cool on baking sheets 5 min.
Remove to a wire racks until it is completely cool.
